Golden Sunset Savoury Camping Rice

Ingredients:
  • An onion, finely chopped
  • 1-2 large garlic cloves, finely chopped
  • 1/2 teaspoon turmeric (optional for colour)
  • 2 carrots, diced
  • 1 red, yellow or orange pepper, cut into small chunks
  • 4 ish mushrooms, chopped into small chunks
  • 1 cup rice
  • 1 – 2 cups water
  • 1 vegetable stock cube
  • 1 bay leaf
  • Mixed herbs
  • A handful of peas
  • 1 tablespoon of vegetable oil
Method:

Heat your oil, then fry up the onion and garlic until just soft. Add turmeric (if using), carrot, mushroom and pepper and fry for another couple of minutes. Give it a stir every few minutes. Add the rice and give it a good stir around, to make sure the rice is nicely coated in the oil. Add enough water to cover everything then crumble the stock cube in. Add herbs & bay leaf. Stir continuously and add more water as necessary. Cook for approximately 10 minutes (or according to rice instructions), then add peas and cook for a final 3 minutes. Don’t forget to remove the bay leaf before serving & enjoy!

Variations:

Try adding some chopped up ham or cooked chicken (just make sure chicken is fully reheated & piping hot). My favourite variation is with halloumi and chorizo; these can be chopped up small and fried before you start, then removed from the pan whilst you cook everything up, and finally stirred through just before serving. Mmmm, delicious!
