Bangers and Smash with Onion Gravy

Top tips: The trick to camping cookery is to think small. When you buy your sausages, think of the gas you’re going to need to cook them, so the best ones to go for are the small ones. Chipolatas are perfect. Also, measuring jugs are big and bulky so do some simple measuring before you go and either commit to memory or mark on your Tupperware with permanent pen. This is invaluable!

Serves 2

Ingredients:
  • 6 thin pork chipolatas
  • 1 packet of instant mashed potato
  • Green veg i.e. broccoli/beans/sugar-snap peas
  • 2 heaped teaspoons of Bisto
  • half an onion

Corned Beef Hash

Top tip: Don't be tempted to over-stir this. The crispy bits are the best bits!

Serves 2

Ingredients:
  • 1 x 225g Tin Corned Beef
  • 1 x 300g Tinned Potatoes
  • 1 Onion
  • Glug of oil or knob of butter
  • Salt and Pepper
  • Ketchup

Bacon Mushroom Frittata

Top tip: Use a piece of tinfoil to ensure this dish is cooked throughout without any messy and potentially dangerous fiascos involving part-cooked fritata flipping.

Serves 2

Ingredients:
  • 4 rashers of bacon
  • 4 eggs
  • 1 tbsp milk (optional)
  • 4 spring onions
  • 8 mushrooms
  • 1.5oz Cheddar cheese
  • Glug of oil or knob of butter
  • Salt and pepper

Moroccan Style Chicken & Pepper Cous Cous

Top tip: To save cooking time and gas you can make this with pre-cooked chicken, either saved from the night before's BBQ or bought in a pack from a supermarket.

  • 2 Chicken Fillets or one large turkey breast
  • 1 Onion sliced finely
  • Large handful of cherry tomatoes
  • 1 tablespoon Ras el Hanout (Moroccan spice mix)
  • 1 Cup of Cous Cous
  • 1 Vegetable stock cube
  • Glug of oil or knob of butter
  • 2 cups water for cous cous

Spaghetti Bolognese Camping Style

Serves 2

Ingredients:
  • Handful of spaghetti (or other pasta)
  • Small pack minced beef
  • 1 onion
  • 1-2 cloves of garlic
  • 1 tin of tomatoes
  • 1 red pepper
  • 4-6 mushrooms
  • Teaspoon of mixed herbs

Golden Sunset Savoury Camping Rice

Serves 2

Ingredients:
  • An onion, finely chopped
  • 1-2 large garlic cloves, finely chopped
  • 1/2 teaspoon turmeric (optional for colour)
  • 2 carrots, diced
  • 1 red, yellow or orange pepper, cut into small chunks
  • 4 ish mushrooms, chopped into small chunks
  • 1 cup rice
  • 1 – 2 cups water
  • 1 vegetable stock cube
  • 1 bay leaf
  • Mixed herbs
  • A handful of peas
  • 1 tablespoon of vegetable oil

Creamy Campers Pasta with Chicken

Top tip: You can buy quick cook pasta, & I would recommend this just to save on time!

Serves 2

Ingredients:
  • 1 cup pasta
  • Small tub of cream cheese such as Philadelphia
  • Shredded cooked chicken – a portion of roast chicken is perfect
  • Veg – anything green, such as peas/runner beans/broccoli or perhaps some mushrooms – whatever you fancy or can get your hands on really!

Camping Cheats Beef and Mushroom Noodles

Instant noodles are ideal when camping, they cook so quickly and a simple yet tasty meal can be made of them with minimum fuss and maximum fill & flavour!

Serves 2

Ingredients:
  • 4 slices cooked beef – sliced from the deli counter is ideal
  • 6-8 mushrooms
  • 2 packs beef flavour instant noodles
  • 2 spring onions
